Venison & Elk
Probably the most popular of the hunted wild game is venison. Elk although more rare, especially in this area, shares similar taste styles. The meat is rich and strong in flavor with subtle earthy undertones. The wine to match this must be equally strong in flavor. A red wine with earthy and slightly smoky flavor are perfect. Moose
Although very similar to Venison and Elk it has subtle taste differences that require a slight tweek to the above selected wines. Although those work very well with Moose here are a couple more options to try as well.
Buffalo
Once the popular meat of many years ago it is now more of an exotic and rare meat to eat. The meat can be heavier than the others here, but is leaner and more delicate than beef with a slight earthy minerally undertone.
Alligator
It has been described as a cross between rabbit and chicken, but also with the tenderness of veal. With this in mind we pair a wine that is a fruity softer red or a Lighter style crisp dry white.
Rabbit
A dark meat with a very subtle sweet taste, it has a lean and mild taste. If you are serving simple then a lighter-bodied wine would work great. If you are serving it in a sauce then match the wine to the sauce.
Hasenpfeffer
A German rabbit stew with many seasonings. To pair a wine with this lets go with a German style wine. The Riesling for the white or the Dornfelder for the red.
