Filet Mignon
One of the most amazing cuts of beef, not to mention one of the most expensive. Filet mignon is the leanest and most tender cut and has a very subtle flavors, which is why it’s often served with sauces. For this it’s important to choose a wine that won’t overshadow the steak.
Fun Fact: Leaner cuts pair very well with light or medium-bodied red wines, with a higher acidity. A wide range of Pinot Noirs fit this list perfectly. Higher in acidity and sometimes lower in alcohol content resulting in a light refreshing taste which compliments the filet and will not overpower its flavor. Sauces will determine how hearty a pinot noir you should choose. For example a peppercorn sauce or other big flavor accompaniments can require a more powerful Pinot Noir. If you want a little more spice in the wine a Malbec is another nice complement to the texture of a filet mignon.
