Charcuterie

Lets journey back to the 15th century France...there we can find the origins of (shar-KOO-ta-REE), basically meaningĀ a branch of cooking devoted to prepared meat products, such as bacon, ham, prosciutto, salami, sausage,Ā etc., primarily from pork, but not exclusively, it can be beef or wild game as well.

But today Charcuterie isn't just cured meats...it can be a fun tray of meats, cheeses, crackers, nuts, fruits, vegetables, and dipping sauces. So pairing a wine can be tricky, but no worries....we've got this!

Rule #1 - Salty cured meats will soften the acidity in wine so choose wines with a higher acidity level.
